    Prepare the Brussels Sprouts

    Preheat your oven to 200°C (400°F). Trim the ends of the Brussels sprouts and cut them in half. Toss them in a bowl with 1 tablespoon of olive oil, salt, and black pepper.

    Roast the Brussels Sprouts

    Spread the Brussels sprouts on a baking sheet in a single layer and roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, turning halfway through.

    Prepare the Other Vegetables

    While the Brussels sprouts are roasting, clean and slice the mushrooms. Rinse the spinach and chop the tomato into small pieces.

    Sauté the Vegetables

    In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced mushrooms and cook until they are soft, about 5 minutes.

    Add Spinach and Tomato

    Stir in the spinach and chopped tomato. Cook for an additional 3-4 minutes until the spinach is wilted and the tomatoes are slightly softened.

    Sprinkle garlic powder, salt, and black pepper over the sautéed vegetables. Stir well to combine and remove from heat.

    Combine with Feta

    Crumble the feta cheese into the skillet with the sautéed vegetables and mix gently to combine.

    Once the Brussels sprouts are done roasting, remove them from the oven and serve alongside the sautéed vegetable mixture. Enjoy your healthy dish!
