Method
Prepare the Cake
- 1
- 2
Melt Chocolate and Butter
In a medium microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- 3
Whisk Eggs and Sugar
In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.
- 4
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly to combine. Add the vanilla extract and a pinch of salt, mixing well.
- 5
Add Flour
Sift the all-purpose flour into the chocolate mixture. Gently fold the flour into the batter until just combined, being careful not to overmix.
- 6
Fill Ramekins
Divide the cake batter evenly among the prepared ramekins, filling each about 3/4 full.
Bake the Cake
- 7
Bake
Bake the cakes in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.
- 8
Cool Slightly
Remove the ramekins from the oven and let them cool for 1-2 minutes. Carefully run a knife around the edges to loosen the cakes.
- 9
Invert and Serve
Invert the ramekins onto serving plates. Serve warm with a scoop of vanilla ice cream on the side.
