Prepare the Fries
Heat oil in a deep fryer or large pot to 180°C (350°F). Fry the frozen French fries according to the package instructions until golden brown and crispy. Remove from oil and drain on paper towels. Season with salt to taste.

Cook the Chili
In a large skillet over medium heat, sauté the chopped onion and minced garlic until the onion is translucent. Add the ground beef and cook until browned. Drain excess fat. Stir in the canned diced tomatoes, kidney beans, chili powder, cumin, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally, until the chili thickens.

Assemble Chili Cheese Fries
On a serving platter or individual plates, layer the crispy fries. Spoon the prepared chili over the fries, then sprinkle with shredded cheddar cheese. Top with a dollop of sour cream and garnish with sliced green onions. Serve hot.
