Prepare the Sausage Mix
In a large mixing bowl, combine the ground chicken and pork fat. Mix them together until well combined.

Add Seasonings
Add the minced garlic, chopped parsley, paprika, salt, black pepper, and red pepper flakes to the meat mixture. Mix until all the ingredients are evenly distributed.

Prepare the Casing
If using natural hog casings, soak them in water for at least 30 minutes. Rinse the casings thoroughly inside and out to remove excess salt.

Using a sausage stuffer, carefully fill the casings with the sausage mixture. Be sure to not overstuff to prevent bursting during cooking.

Once filled, twist the sausages into links and tie off the ends with kitchen twine.

In a large skillet over medium heat, add a little bit of oil. Cook the sausage links for about 15-20 minutes, turning occasionally, until they are golden brown and cooked through (internal temperature should reach 165°F/74°C).
