Preparing the Potatoes

    Wash and Cut Potatoes

    Wash the russet potatoes thoroughly under cold water. Cut each potato into thin strips, about 1/4 inch wide.

    Soak the Potatoes

    Place the cut potato strips in a bowl of cold water and soak for at least 30 minutes. This step helps to remove excess starch and results in crispier fries.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Frying the Potatoes

    Heat the Oil

    In a large deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of dried potato strips to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Repeat with remaining batches.

Adding Cheese and Serving

    Melt the Cheese

    Preheat the oven to 375°F (190°C). Place the fried fries on a baking sheet and sprinkle evenly with cheddar and Parmesan cheese. Bake in the oven for about 5 minutes or until the cheese is melted and bubbly.

    Season and Garnish

    Remove the cheesy fries from the oven. Sprinkle with salt, black pepper, garlic powder, and paprika. Optionally, add chopped green onions and serve with sour cream on the side.
