    Prepare the Blueberries

    Rinse the fresh blueberries under cold water and drain them well.

    Mix the Filling Ingredients

    In a medium bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, ground cinnamon, and a pinch of salt. Toss gently to coat the blueberries evenly with the mixture. Set aside to macerate for about 15 minutes.

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt. Cut the cold unsalted butter into small cubes and add it to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

    Gradually add the ice water, one tablespoon at a time, mixing until the dough begins to come together. Do not overmix.
