Method
APPETIZERS
- 1
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. This will help the coating stick better.
- 2
Make the Coating
In a large mixing bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, salt, and black pepper. Mix well until all dry ingredients are fully incorporated.
- 3
Soak the Calamari
Pour the buttermilk into a separate bowl. Submerge the calamari rings in the buttermilk and let them soak for about 10-15 minutes.
- 4
Coat the Calamari
Remove the calamari from the buttermilk and shake off the excess. Dredge them in the flour mixture, ensuring they are fully coated. Shake off any excess flour and set aside.
- 5
Heat the Oil
In a heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).
- 6
Fry the Calamari
Carefully add a batch of the coated calamari to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and drain on paper towels.
- 7
Prepare the Lemon-Garlic Aioli
In a small bowl, mix together mayonnaise, minced garlic, and the juice of half a lemon. Chopped fresh parsley can be added for garnish. Season with salt to taste.
