Prepare the Bread
Cut the day-old bread into 1-inch cubes and place them in a large mixing bowl.

Make the Custard Mixture
In a separate bowl, whisk together the eggs, granulated sugar, brown sugar, vanilla extract, ground cinnamon, and salt until well combined.

Combine Liquids
In a saucepan, heat the whole milk and heavy cream over medium heat until just warm. Remove from heat and whisk in the bourbon.

Prepare the Baking Dish
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter.

Transfer to Baking Dish
Pour the soaked bread mixture into the prepared baking dish, spreading it out evenly. Sprinkle the chopped pecans on top.

Bake the Pudding
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

Prepare the Caramel Sauce
While the bread pudding is baking, heat the caramel sauce in a small saucepan over low heat until warm.

Once baked, allow the bread pudding to cool slightly. Serve warm topped with a generous drizzle of caramel sauce, a scoop of vanilla ice cream, and whipped cream.
