Prepare and season

Pat wings dry with paper towels. In a bowl, toss wings with salt, black pepper, garlic powder and cornstarch until evenly coated.

Fry the wings

Heat 1 cup vegetable oil in a deep skillet or pot to 350°F (175°C) over medium-high heat. Working in a single layer and not overcrowding, carefully lower wings into the oil and fry 8–10 minutes, turning once, until golden brown and internal temperature reaches 165°F (74°C). Remove wings and drain on a paper towel-lined plate.

Toss in sauce

Place fried wings in a clean bowl. Pour 1/4 cup of your chosen wing sauce over wings and toss until evenly coated. Keep warm until serving.

Eggrolls (3)

Heat 1/2 cup vegetable oil in a small skillet over medium heat (or preheat oven/air fryer if using those methods). If frying: carefully place frozen eggrolls in hot oil and fry 3–5 minutes, turning occasionally, until all sides are golden brown and internal temperature is hot. Drain on paper towels. If air frying: preheat to 400°F (200°C) and air fry 8–10 minutes, turning halfway. If baking: preheat oven to 425°F (220°C) and bake 15–20 minutes, turning halfway. Serve with 3 tablespoons dipping sauce.

Dredge

Pat shrimp dry. In a small bowl combine 2 tablespoons flour, 1/4 tsp salt and 1/4 tsp black pepper. Lightly dredge each shrimp, shaking off excess flour.

Cook

Heat 1/2 cup vegetable oil in a skillet over medium-high heat. Add shrimp in a single layer and cook 1–2 minutes per side until opaque and pink (total 3–4 minutes). Remove shrimp to a paper towel-lined plate.

Sauce

Return shrimp to the warm skillet off the heat or over low heat. Add 2 tablespoons of your chosen shrimp sauce (for garlic butter, melt butter and add minced garlic; for Cajun, toss with Cajun seasoning and a little butter; for sweet chili or lemon pepper, toss until evenly coated). Heat just until sauce coats shrimp, then remove to serving.

French Fries

Cook fries using your preferred method. For frying: heat 1/2 cup oil to 350°F (175°C) and fry fries in batches 3–5 minutes until golden and crisp; drain on paper towels and season with 1/2 tsp salt. For oven: spread fries on a baking sheet, bake at 425°F (220°C) for 18–25 minutes, turning once, until crisp, then salt. For air fryer: air fry at 400°F (200°C) for 10–15 minutes, shaking halfway. Keep warm.

Garnish & Plating

On a large platter arrange wings, eggrolls, shrimp and fries. Sprinkle chopped parsley over fries and shrimp if desired. Add lemon wedges alongside the shrimp. Place any extra dipping sauces in small bowls on the platter. Serve immediately while hot.
