Make Simple Syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring occasionally, until the sugar fully dissolves and the mixture is clear (do not boil vigorously). Remove from heat and let the syrup cool to room temperature, about 10–15 minutes. If you want a smoother texture, skim any foam.
Juice the Lemons
While the syrup is cooling, roll and then halve enough lemons to yield 1 cup fresh lemon juice (≈4–6 medium lemons). Juice them, strain through a fine mesh sieve into a measuring cup to remove seeds and pulp if you prefer a clear lemonade. Stir in 1 teaspoon lemon zest into the juice if using.
Combine
In a pitcher, combine the cooled simple syrup and 1 cup fresh lemon juice. Add 3 cups cold water and stir well. Taste and adjust: for stronger lemonade add up to 1/2 cup more lemon juice; for sweeter add up to 1/4 cup more syrup or 1–2 tablespoons sugar dissolved into a little water. If using, add a pinch of salt to brighten the flavors.
Chill and Serve
Add 4 cups of ice to the pitcher or to individual glasses. Pour the lemonade over ice, garnish with lemon slices and fresh mint leaves. Serve immediately. Leftover lemonade can be refrigerated in a sealed container for up to 4 days—stir before serving as separation may occur.
