If using frozen fries: preheat oven to 425°F (220°C). Spread fries on a single layer on a rimmed baking sheet, spray or toss lightly with 1 tbs oil if desired, and bake according to package instructions (usually 18–25 minutes) until crisp, turning once. Season with 1 tsp salt immediately and keep warm. If using fresh fries: cut russets into 1/4–1/2" sticks, soak 30 minutes in cold water, drain and dry thoroughly, then par-fry at 325°F (160°C) 3–5 minutes until tender; drain, chill briefly, then fry at 375°F (190°C) 2–3 minutes until golden. Drain on paper, salt to taste and keep warm.

Form Patties

Divide 1 lb ground beef into four equal portions and gently form two patties about 4–4.5 oz each and roughly 4" in diameter (for a double-stack use two patties per burger). Make a slight dimple in the center of each patty to prevent doming. Season both sides with kosher salt and freshly ground black pepper.

Cook Bacon

Heat a heavy skillet or griddle over medium-high heat. Add bacon slices in a single layer and cook, turning occasionally, until crisp and golden, about 6–8 minutes depending on thickness. Transfer cooked bacon to a paper towel-lined plate to drain. Reserve 1 tsp bacon fat in skillet (optional) and discard excess.

Toast Texas Toast

Butter one side of each Texas toast slice with the softened butter. Heat another skillet or clean the griddle over medium heat. Place bread butter-side down and toast until golden brown, about 2–3 minutes. Toast the other side for 1–2 minutes briefly so both sides are warm and slightly crisp. Remove and set aside.

Cook Patties

Increase heat to medium-high and add 1 tbs vegetable oil to the skillet or griddle. When shimmering, add two beef patties (do not overcrowd; cook in two batches if necessary). Cook undisturbed 3–4 minutes until a brown crust forms on the bottom. Flip and cook another 2–3 minutes for medium (adjust time for desired doneness). In the final minute of cooking, place a slice of cheddar on each patty to melt and cover the pan briefly with a lid to help melt the cheese.

Assemble Double Bacon Burger

Place one toasted Texas toast slice on a plate, buttered side down. If using condiments, spread 1 tbs mayonnaise and 1 tsp mustard on the bread (optional). Lay a lettuce leaf on the toast, add one cheese-topped patty, then 3 slices of crispy bacon, then the second patty. Top with tomato slices and pickles if using. Finish with the second Texas toast slice, buttered side up. Press gently to set.

Serve

Cut the sandwich in half if desired and serve immediately with hot French fries on the side.

Optional / Condiments

If using condiments, mix or spread mayonnaise and mustard on the inside of the Texas toast before assembling. Add pickles between the patties or on top of tomato according to preference.
