Prepare shaker

If using egg white, add the egg white, gin, fresh lime juice, simple syrup, orange curaçao, falernum, and Angostura bitters to a cocktail shaker without ice for a dry shake. Dry shake vigorously for 10–15 seconds to emulsify and build foam.

Wet shake

Add ice to the shaker (about 1 cup) and shake again vigorously for 12–18 seconds until well chilled and the outside of the shaker is frosty.

Double strain and serve

Double-strain the cocktail into a chilled coupe or martini glass using a fine mesh strainer to remove ice shards and any coagulated egg bits. If not using egg white, simply shake with ice and strain once.

Garnish

Express the oils from a lime twist over the surface of the drink, run the twist around the rim and drop it in (or float a lime wheel). Finish with a light grating of nutmeg or cinnamon over the foam.
