Cooking Instructions
- 1
Prepare the Ingredients
Chop the onion, red bell pepper, jalapeno, and mince the garlic. Rinse the red lentils under cold water.
- 2
Sauté Vegetables
In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, jalapeno, and red bell pepper. Sauté for about 5-7 minutes until the vegetables are softened.
- 3
Add Spices
Stir in the ground cumin, chili powder, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
- 4
Combine Ingredients
Add the rinsed red lentils, canned diced tomatoes (with their juice), and vegetable broth to the pot. Stir to combine.
- 5
Simmer
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 25-30 minutes, or until the lentils are tender.
- 6
Finish with Cilantro
Once the lentils are cooked, stir in the fresh chopped cilantro and adjust seasoning if necessary. Cook for an additional 5 minutes.
- 7
Serve
Serve hot, garnished with extra cilantro if desired.
