Prepare the Sauce
In a bowl, mix together 1/2 cup of ketchup, 1/4 cup of apple cider vinegar, 1/4 cup of brown sugar, and 2 tablespoons of soy sauce. Set aside.

Prepare the Chicken
Cut the boneless chicken thighs into bite-sized pieces and coat them in cornstarch. Ensure each piece is well coated.

Fry the Chicken
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken pieces and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Stir-Fry the Vegetables
In the same skillet, add the chopped bell peppers and pineapple chunks. Stir-fry for about 3-4 minutes until the vegetables are slightly tender.

Add the fried chicken back into the skillet with the vegetables. Pour the prepared sweet and sour sauce over the chicken and vegetables, stirring to combine. Cook for an additional 2-3 minutes until everything is heated through.
