Prepare the Noodles

Cook the noodles according to the package instructions. Drain and set aside.

Cook the Pork

In a large pan or wok, heat the vegetable oil over medium heat. Add the diced pork belly and cook until browned and cooked through.

Add Vegetables

Add the diced onion, zucchini, carrot, and minced garlic to the pan. Sauté until the vegetables are tender.

Make the Sauce

Push the ingredients to one side of the pan, and add the black bean paste to the empty side. Stir-fry the paste for a minute to enhance its flavor. Then, mix everything together.

Combine with Water

Add sugar, soy sauce, and water to the pan. Stir well and let it simmer for about 5-7 minutes until the sauce thickens.

Serve

Place the cooked noodles in bowls, spoon the black bean sauce with pork and vegetables over the noodles, and garnish with chopped spring onions.
