1. Prepare the Potatoes

Preheat the oven to 425°F (220°C). Wash and scrub the potatoes, then slice them thinly using a mandoline or sharp knife.

2. Season the Chips

In a large bowl, toss the potato slices with olive oil, salt, black pepper, paprika, and garlic powder until evenly coated.

3. Bake the Chips

Spread the seasoned potato slices in a single layer on a baking sheet. Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.

4. Cool the Chips

Once baked, remove the chips from the oven and let them cool on a wire rack.

5. Mix the Ingredients

In a medium bowl, combine the sour cream, mayonnaise, finely chopped onion, garlic powder, dried chives, salt, and black pepper.

6. Chill the Dip

Mix well until smooth and creamy. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
