Method
Soufflé Directions
- 1
Prepare the Chocolate Mixture
Preheat your oven to 190°C (375°F). Melt the Valrhona Caraibe chocolate and unsalted butter together in a heatproof bowl set over simmering water, stirring occasionally until smooth.
- 2
Beat the Eggs
In a separate bowl, whisk together the granulated sugar and eggs until pale and fluffy. Gradually add the melted chocolate mixture and mix until fully incorporated.
- 3
Fold in Dry Ingredients
Sift the all-purpose flour and sea salt into the chocolate-egg mixture. Gently fold using a spatula until no dry flour remains.
- 4
Prepare the Ramekins
Butter four ramekins and dust with granulated sugar, shaking out any excess. This helps the soufflés rise properly.
- 5
Fill and Bake
Divide the soufflé batter among the ramekins and place them on a baking tray. Bake for 12-15 minutes, until puffed and set on the outside but still soft in the center.
Ice Cream Directions
- 6
Mix the Ice Cream Base
In a saucepan, combine heavy cream, whole milk, granulated sugar, and sea salt. Heat over medium heat until the sugar dissolves, but do not boil.
- 7
- 8
Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.
- 9
Add Olive Oil and Vanilla
Remove from heat and stir in the extra virgin olive oil and vanilla extract. Let it cool, then chill in the refrigerator for at least 4 hours or overnight.
- 10
Churn the Ice Cream
Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.
Walnuts and Ciabatta Directions
- 11
Toast the Walnuts
Preheat the oven to 180°C (350°F). Spread the walnuts on a baking sheet and toast in the oven for about 8-10 minutes, until fragrant and golden.
- 12
Prepare the Ciabatta Crisp
Slice the ciabatta bread into thin pieces. Brush both sides with olive oil and sprinkle with sea salt. Arrange on a baking sheet.
- 13
Bake the Ciabatta
Bake the ciabatta slices in the oven for about 10-12 minutes, or until golden and crispy. Allow to cool.
