Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rinsed rice with 1.5 cups of water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then cover and simmer on low for 20 minutes.

    Season Rice

    In a small bowl, mix together 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 0.5 teaspoon of salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Salmon and Toppings

    Marinate Salmon

    Preheat your broiler. In a small bowl, mix 2 tablespoons of miso paste with a little water to form a paste. Coat the salmon fillet with the miso mixture and let it marinate for 15 minutes.

    Blanch Asparagus

    Bring a small pot of water to a boil. Add the asparagus spears and blanch for 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop cooking.

    Prepare Scallions

    Thinly slice the scallions diagonally and set aside.

    Broil Salmon

    Place the marinated salmon under the broiler for 6-8 minutes, or until the surface is caramelized and cooked to your liking.

    Make Wasabi Mayo

    In a small bowl, mix together 2 tablespoons of mayonnaise and 1 teaspoon of wasabi. Adjust the amount of wasabi to taste.

Assemble Sushi Rolls

    Prepare Nori

    Lay a nori sheet, shiny side down, on a bamboo sushi mat. Wet your hands to prevent sticking and take a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top edge.

    Add Fillings

    Place a few pieces of blanched asparagus, slices of broiled salmon, and scallions in a line across the rice.

    Roll Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Wet the top edge of the nori to seal the roll.

    Slice Rolls

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

    Garnish and Serve

    Sprinkle sesame seeds over the sushi rolls and serve with soy sauce and wasabi mayo on the side.
