Method

Ice Cream Base

  1. 1

    Prepare the Ice Cream Mixture

In a large mixing bowl, combine the pumpkin puree, heavy cream, whole milk, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, ground ginger, vanilla extract, and a pinch of salt. Whisk together until the mixture is smooth and all ingredients are well incorporated.

  2. 2

    Chill the Mixture

Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or until it's thoroughly chilled. This step is essential for a smoother texture.

  3. 3

    Churn the Ice Cream

Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  4. 4

    Freeze the Ice Cream

Transfer the churned ice cream into an airtight container and freeze for at least 4 hours, or until firm.

Salted Caramel Sauce

  1. 5

    Make the Caramel

In a medium saucepan over medium heat, add the granulated sugar. Stir continuously until the sugar melts and turns a golden amber color. Be careful not to burn it.

  2. 6

    Add Butter and Cream

Once the sugar is melted, carefully add the butter (it will bubble vigorously) and stir until melted. Gradually add the heavy cream while stirring until combined.

  3. 7

    Finish the Sauce

Remove from heat and stir in the sea salt. Let the caramel sauce cool slightly before using.
