Method

Prepare Short Ribs

    Sear the Ribs

    Season the short ribs with salt and black pepper. Heat olive oil in a large pot over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove from pot and set aside.

    Cook the Aromatics

    In the same pot, add diced onions and minced garlic. Sauté until onions are translucent, about 5 minutes.

    Braise the Ribs

    Return the short ribs to the pot. Add beef broth, Worcestershire sauce, and fresh thyme. Bring to a simmer, cover, and reduce heat to low. Cook for 2-3 hours or until the meat is tender and falling off the bone.

Caramelize Onions

    Cook the Onions

    In a separate pan, melt butter over medium heat. Add sliced onions and salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20-25 minutes.

Poach Eggs

    Prepare Water

    Fill a large saucepan with water and bring to a gentle simmer. Add white vinegar.

    Poach the Eggs

    Crack each egg into a small bowl. Gently slide each egg into the simmering water. Cook for about 3-4 minutes until the whites are set but the yolks remain runny. Remove eggs with a slotted spoon and drain on paper towels.

Make Hollandaise Sauce

    Whisk the Yolks

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler method).

    Add Butter

    Slowly drizzle in melted unsalted butter while whisking continuously until the sauce thickens. Season with salt and cayenne pepper to taste.

Assemble the Dish

    Prepare Puff Pastry

    Preheat the oven to 400°F (200°C). Roll out the puff pastry sheet and cut into rounds. Place on a baking sheet and bake for 15-20 minutes until golden brown.

    Plate the Benedict

    On each puff pastry round, layer shredded short ribs, a scoop of caramelized onions, and a poached egg. Drizzle with hollandaise sauce and serve immediately.
