Preparation of Fish

Selecting Fresh Fish
Choose high-quality, fresh fish from a reputable source. Look for fish that has a bright color and a fresh smell.

Slicing the Fish
Using a sharp knife, slice the salmon, tuna, yellowtail, mackerel, and octopus into thin, even pieces. Aim for slices about 1/4 inch thick.
Plating

Arranging the Sashimi
On a large platter, arrange the sliced fish in an aesthetically pleasing manner. Place two pieces of each type of fish next to each other.

Adding Garnishes
Add a small dollop of wasabi and a small bowl of soy sauce on the side of the platter. Scatter pickled ginger around the fish and garnish with microgreens.
