Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the rigatoni pasta and cook until al dente, according to the package instructions. Drain and set aside, reserving a cup of pasta water.

Grilling Calamari

    Marinate the Calamari

    In a bowl, combine the cleaned calamari rings, olive oil, lemon juice, minced garlic, salt, and black pepper. Allow to marinate for at least 15 minutes.

    Grill the Calamari

    Preheat a grill or grill pan over medium-high heat. Grill the marinated calamari for 2-3 minutes on each side until opaque and cooked through. Remove from heat and set aside.

Preparing Gremolata

    Combine Gremolata Ingredients

    In a small bowl, mix together the minced garlic, chopped parsley, lemon zest, and olive oil. Set aside.

Cooking Zucchini

    Sauté the Zucchini

    In a skillet, heat olive oil over medium heat. Add the thinly sliced zucchini, salt, and black pepper. Cook until tender and slightly caramelized, about 5-7 minutes.

Combining Ingredients

    Mix Everything Together

    In a large mixing bowl, combine the cooked rigatoni, grilled calamari, sautéed zucchini, and gremolata. Toss gently to combine, adding reserved pasta water as necessary to achieve a creamy consistency.

    Add grated pecorino cheese and lemon juice. Toss to combine and adjust seasoning if needed.

Serving
