    Prepare the Base

    In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until it forms a roux.

    Add Milk

    Gradually add the milk to the roux while whisking to avoid lumps. Continue to cook for about 5-7 minutes until the mixture thickens.

    Incorporate Ham

    Chop the Pata Negra ham finely and fold it into the thickened mixture. Season with salt, black pepper, and nutmeg. Mix well and remove from heat.

    Chill the Mixture

    Transfer the mixture to a bowl, cover it with plastic wrap, and refrigerate for at least 2 hours until it’s firm.

    Bread the Croquettes

    Once chilled, take small portions of the mixture and shape them into small cylinders. Dip each croquette in beaten eggs and then roll them in breadcrumbs to coat completely.

    Fry the Croquettes

    Heat oil in a deep frying pan over medium heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Cook the Cherries

    In a saucepan, combine the black cherries, sugar, lemon juice, and water. Bring to a gentle simmer over medium heat.

    Simmer the Compote

    Allow the mixture to simmer for about 15-20 minutes, stirring occasionally, until the cherries have softened and the sauce has thickened.

    Cool and Serve

    Remove from heat and let the compote cool to room temperature. Serve alongside the croquettes.
