Foie Gras Preparation

Steamed Brioche

Onion Marmalade

Caramelized Apple

Method

Foie Gras Preparation

  1. 1

    Prepare the Foie Gras

In a bowl, season the foie gras with salt, white pepper, and cognac. Let it marinate in the refrigerator for at least 30 minutes.

  2. 2

    Steam the Foie Gras

Place the marinated foie gras in a steamer basket lined with parchment paper. Steam for 10-15 minutes until cooked through and tender.

Steamed Brioche

  1. 3

    Prepare the Brioche

Spread the butter on both sides of each brioche slice. Place the slices in a steamer for about 5-7 minutes until warm and slightly soft.

Onion Marmalade

  1. 4

    Cook the Onions

In a medium skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and translucent, about 10 minutes.

  2. 5

    Add Sugar and Vinegar

Stir in the brown sugar and balsamic vinegar. Cook for an additional 10-15 minutes, stirring frequently, until the mixture is thick and caramelized.

Caramelized Apple

  1. 6

    Prepare the Apples

Peel, core, and slice the apples into thin wedges.

  2. 7

    Caramelize the Apples

In a skillet, melt the butter over medium heat. Add the apple wedges and sugar, stirring gently. Cook until the apples are soft and caramelized, about 8-10 minutes.
