Turkey

    Preheat Oven

    Preheat your oven to 325°F (163°C).

    Prepare Turkey

    Pat the turkey dry with paper towels. Season the inside of the turkey with salt and pepper.

    Season Turkey

    Rub the exterior of the turkey with olive oil, then sprinkle with salt, pepper, thyme, rosemary, and minced garlic.

    Roast Turkey

    Place the turkey on a roasting rack in a large roasting pan. Roast in the preheated oven for approximately 3-4 hours, or until the internal temperature reaches 165°F (74°C).

    Baste Turkey

    Baste the turkey every 30 minutes with the drippings.

    Rest Turkey

    Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes before carving.

Foie Gras Stuffing

    Sauté Vegetables

    In a large skillet, melt butter over medium heat. Add onion and celery, cooking until softened.

    Combine Ingredients

    In a large bowl, combine the sautéed vegetables, cubed French bread, foie gras, sage, and chicken broth. Mix until combined.

    Stuff Turkey

    Season with salt and pepper to taste, then stuff the turkey cavity with the mixture.

    Bake Leftover Stuffing

    Any leftover stuffing can be baked in a separate dish at 350°F (175°C) for about 30 minutes.

Maple-Soy Sweet Potato Mash

    Cook Sweet Potatoes

    Boil sweet potatoes in a large pot of salted water until tender, about 15-20 minutes.

    Mash Ingredients

    Drain the potatoes and return them to the pot. Add maple syrup, soy sauce, butter, salt, and pepper.

    Mash Sweet Potatoes

    Mash until smooth and creamy, adjusting seasoning to taste.

Green Bean Casserole

    Prepare Green Beans

    Preheat oven to 350°F (175°C). Boil green beans in salted water until tender, about 5-7 minutes.

    Combine Ingredients

    In a large bowl, combine cooked green beans, cream of mushroom soup, milk, and half of the French fried onions. Mix well.

    Prepare for Baking

    Transfer to a baking dish and top with remaining French fried onions.

    Bake in the preheated oven for 25-30 minutes or until bubbly.

Turkey Jus

    Combine Jus Ingredients

    In a saucepan, combine turkey drippings and chicken broth. Bring to a simmer over medium heat.

    In a small bowl, mix cornstarch and water until smooth. Stir into the simmering jus, cooking until thickened.

    Season with salt and pepper to taste before serving.

Cranberry Gel

    Cook Cranberries

    In a saucepan, combine cranberries, sugar, and water. Cook over medium heat until cranberries burst, about 10 minutes.

    Strain Mixture

    Strain the mixture to remove skins and seeds, returning the liquid to the saucepan.

    Prepare Gelatin

    Sprinkle gelatin over the liquid and let sit for 5 minutes. Heat gently until gelatin dissolves.

    Pour into a mold and refrigerate until set, about 2 hours.
