Preparation of Sorbet Base

Make the Simple Syrup
In a medium saucepan, combine 2 cups of water and 1 cup of granulated sugar. Heat over medium heat until the sugar is completely dissolved, stirring occasionally.

Add Lemon Juice
Remove the saucepan from heat and allow the mixture to cool. Once cooled, stir in 1 cup of fresh lemon juice to create the sorbet base.
Preparing the Fruit Purees

Blend Strawberries
In a blender, add 2 cups of fresh strawberries. Blend until smooth, then strain through a fine-mesh sieve to remove seeds. Set aside the puree.

In the same blender, add 2 cups of fresh mango, peeled and diced. Blend until smooth, then strain through a fine-mesh sieve to remove any fibers. Set aside the puree.

Finally, add 2 cups of fresh raspberries to the blender. Blend until smooth, then strain through a fine-mesh sieve to remove seeds. Set aside the puree.
Combining and Freezing

Mix and Freeze
Divide the sorbet base into three equal parts. Mix the strawberry puree with one part of the base, the mango puree with another part, and the raspberry puree with the last part. Pour each mixture into separate containers and freeze for at least 4 hours or until firm.
