Prepare the Ingredients
Chop the pancetta into small pieces and mince the garlic. Grate the Parmesan cheese and set aside.

Cook the Spaghetti
In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of the pasta water, then drain the spaghetti.

Cook the Pancetta
In a large skillet over medium heat, add the olive oil and pancetta. Cook until the pancetta is crispy, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Make the Sauce
In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add black pepper to taste.

Combine Everything
Add the drained spaghetti to the skillet with the pancetta and garlic. Remove from heat and quickly pour the egg and cheese mixture over the pasta, stirring vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Plate the spaghetti carbonara and garnish with additional Parmesan cheese and black pepper if desired.
