Prepare Burger Patties

Mix Ingredients
In a large mixing bowl, combine the pinto beans, cooked rice, mashed sweet potato, rolled oats, pumpkin seeds, and cooked quinoa. Mash the mixture together until well combined and hold its shape.

Shape Patties
Form the mixture into burger patties, about 1 inch thick. You should be able to make about 6 patties. Place them on a baking sheet lined with parchment paper.

Chill
Refrigerate the patties for at least 30 minutes to firm up.
Prepare Serrano Aioli

Combine Ingredients
In a small bowl, mix together the finely chopped serrano pepper, mayonnaise, minced garlic, lemon juice, and salt to taste. Stir until well combined.
Cook Patties

Heat Pan
In a large skillet, heat a tablespoon of oil over medium heat.

Once the oil is hot, add the chilled burger patties. Cook for about 5-6 minutes on each side, or until golden brown and heated through.
Assemble Burgers

Prepare Toppings
While the patties are cooking, slice the avocado and tomato, and prepare the lettuce and pickled vegetables.

On a bun or plate, place a lettuce leaf, followed by a burger patty, sliced tomato, avocado, pickled vegetables, and a dollop of serrano aioli on top.
