Preparation

  1. 1

    Prepare the Ingredients

Dice the chicken breast and slice the Andouille sausage. Mince the garlic cloves and dice the bell peppers and onion. Set aside.

Cooking

  1. 2

    Sauté the Meats

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Andouille sausage and chicken, cooking until browned, about 5-7 minutes. Remove from pot and set aside.

  2. 3

    Cook the Vegetables

In the same pot, add the diced onion, bell peppers, and minced garlic. Sauté for about 4-5 minutes until the vegetables are softened.

  3. 4

    Add the Rice and Spices

Stir in the long-grain rice, Cajun seasoning, salt, black pepper, and red pepper flakes. Mix well to coat the rice with the spices.

  4. 5

    Combine and Cook

Return the cooked Andouille sausage and chicken to the pot. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed the broth.

  5. 6

    Add Shrimp

After 20 minutes, add the shrimp to the pot. Cover again and cook for an additional 5 minutes or until the shrimp are pink and cooked through.

  6. 7

    Garnish and Serve

Remove from heat, fluff the jambalaya with a fork, and garnish with sliced green onions. Serve hot.
