Prepare the Pork
Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano.

Slow Cook the Pork
Place the seasoned pork in a slow cooker, add orange juice, lime juice, garlic cloves, onion (cut into quarters), and bay leaves. Cover and cook on low for 8 hours or until the meat is tender and easily shredded.

Shred the Pork
Remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker to absorb more juices.

Make the Pickling Liquid
In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a simmer over medium heat, stirring until the sugar and salt dissolve.

Prepare the Vegetables
Shred the green cabbage, peel and julienne the jicama, and grate the carrot.

Make the Slaw
In a large bowl, combine shredded cabbage, jicama, carrot, lime juice, salt, and chopped cilantro. Toss well to combine and let it sit for 15 minutes to soften.
Assemble Tacos

Warm the Tortillas
Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

Serve the tacos warm, garnished with additional cilantro and lime wedges if desired.
