Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix the Wet Ingredients
In a large mixing bowl, combine 1 cup of peanut butter, 1 cup of brown sugar, and 1 tablespoon of granulated sugar. Mix until well combined. Add in the large egg and 1 teaspoon of vanilla extract, mixing until smooth.

Add Dry Ingredients
In a separate bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking soda, and 0.5 teaspoon of salt. Gradually add the dry mixture to the wet mixture, stirring until fully combined.

Transfer to Skillet
Grease a 10-inch cast-iron skillet (or similar oven-safe skillet) with a little cooking spray or butter. Pour the cookie dough into the skillet and spread it evenly.

Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden and the center is set but still soft.
Serving

Add Toppings
Once the skillet cookie is out of the oven, let it cool for a few minutes. Top with 2 scoops of vanilla ice cream, then drizzle 3 tablespoons each of caramel and chocolate sauce over the top.

Finish with Whipped Cream
Add whipped cream on top to taste and sprinkle with chopped peanuts for extra crunch.
