Method
Preparing the Chicken
- 1
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 2
Prepare the Breading Station
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of Parmesan cheese, breadcrumbs, garlic powder, salt, and black pepper.
- 3
Bread the Chicken
Dip each chicken breast first in flour, shaking off the excess, then in the egg, and finally coat it with the Parmesan-breadcrumb mixture, pressing it onto the chicken to ensure it sticks.
- 4
Cook the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Transfer the chicken to a baking dish and finish cooking in the preheated oven for 15-20 minutes or until cooked through.
Making the White Wine Sauce
- 5
- 6
Deglaze with Wine
Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Let it simmer for about 2-3 minutes until reduced by half.
- 7
Add Broth and Cream
Stir in chicken broth and bring it to a simmer. Then add the heavy cream and continue to cook until the sauce thickens slightly. Stir in chopped parsley before serving.
