Method

Preparing the Chicken

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare the Breading Station

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of Parmesan cheese, breadcrumbs, garlic powder, salt, and black pepper.

  3. 3

    Bread the Chicken

Dip each chicken breast first in flour, shaking off the excess, then in the egg, and finally coat it with the Parmesan-breadcrumb mixture, pressing it onto the chicken to ensure it sticks.

  4. 4

    Cook the Chicken

In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Transfer the chicken to a baking dish and finish cooking in the preheated oven for 15-20 minutes or until cooked through.

Making the White Wine Sauce

  1. 5

    Sauté Shallots and Garlic

In the same skillet used for the chicken, melt butter over medium heat. Add finely chopped shallots and minced garlic, sauté until translucent.

  2. 6

    Deglaze with Wine

Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Let it simmer for about 2-3 minutes until reduced by half.

  3. 7

    Add Broth and Cream

Stir in chicken broth and bring it to a simmer. Then add the heavy cream and continue to cook until the sauce thickens slightly. Stir in chopped parsley before serving.

Preparing the Mashed Potatoes

  1. 8

    Boil the Potatoes

In a large pot, add the peeled and quartered potatoes. Cover with water, add a pinch of salt, and bring to a boil. Cook until tender, about 15-20 minutes.

  2. 9

    Mash the Potatoes

Drain the potatoes and return to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Cooking the Green Beans

  1. 10

    Sauté the Green Beans

In a separate skillet, heat olive oil over medium heat. Add the trimmed green beans, season with salt and pepper, and sauté for about 5-7 minutes until tender yet crisp.
