    Sauté the Aromatics

    In a large pot, melt the unsalted butter over medium heat. Add the finely chopped shallots and sauté until they are translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the tomato paste to the pot and stir well, cooking for another 2 minutes. Gradually sprinkle in the all-purpose flour, stirring continuously to form a roux. Cook for about 5 minutes until the mixture is golden brown.

    Add Stock and Seasonings

    Slowly whisk in the fish stock, ensuring there are no lumps. Bring the mixture to a simmer and add the dried thyme, Old Bay seasoning, salt, black pepper, and cayenne pepper. Let it simmer for 15 minutes to allow the flavors to meld.

Finishing the Bisque

    Stir in the heavy cream and continue to simmer for an additional 10 minutes, stirring occasionally.

    Gently fold in the cooked and chopped lobster meat, allowing it to heat through for about 5 minutes.

    Remove the pot from heat and stir in the lemon juice for a fresh finish.

Serving

    Ladle the bisque into bowls and garnish with chopped fresh chives and a sprinkle of lemon zest. Serve hot.
