    Chop the Vegetables

    Dice the onion, celery, and carrot into small pieces. Peel and cube the Maine potatoes into bite-sized pieces.

    Prepare the Clams

    If using fresh clams, ensure they are cleaned and chopped. If using canned, drain and set aside.

Cooking

    Sauté Vegetables

    In a large pot, melt the butter over medium heat. Add the diced onion, celery, and carrot. Sauté until the vegetables are soft, about 5 minutes.

    Add Potatoes and Broth

    Add the cubed Maine potatoes to the pot and pour in the chicken broth. Stir well and bring to a boil. Reduce heat to a simmer and cook for 15 minutes, or until the potatoes are tender.

    Incorporate Clams and Seasonings

    Stir in the chopped clams, thyme, bay leaves, salt, and black pepper. Continue to simmer for an additional 5 minutes.

    Add Cream and Milk

    Slowly stir in the heavy cream and milk. Allow the chowder to heat through without boiling for another 5 minutes.
