Place the sliced potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and ensures crispiness.

3. Dry Potato Slices

After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.

4. Mix Cajun Seasoning

In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Mix well to form a uniform seasoning blend.

Frying Chips

5. Heat Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small piece of potato into the oil; if it sizzles, the oil is ready.

6. Fry Potato Slices

Carefully add a handful of the dried potato slices to the hot oil, being careful not to overcrowd the pot. Fry them for about 3-4 minutes or until they turn golden brown and crispy.

7. Drain and Season

Using a slotted spoon, remove the chips from the oil and drain them on a plate lined with paper towels. While they are still hot, sprinkle the Cajun seasoning mixture over the chips, tossing lightly to coat evenly.

Continue frying the remaining potato slices in batches until all are cooked and seasoned.
