Infused Tequila

Infuse the Tequila
Slice the jalapeno peppers into halves and remove the seeds for less heat if desired. Place the sliced jalapenos into a clean glass jar and pour the El Jimador tequila over them. Seal the jar tightly and let it infuse in a cool, dark place for at least 24 hours, or up to 3 days for a stronger flavor.

Mix the Margarita
After the tequila has infused, strain out the jalapeno slices using a fine mesh strainer or cheesecloth. In a cocktail shaker, combine 50 ml of the infused tequila, 50 ml of triple sec, 100 ml of fresh lime juice, and 30 ml of simple syrup. Add ice cubes and shake vigorously for about 15 seconds.

Prepare the Glass
On a small plate, pour some salt and spread it out. Rub the rim of a serving glass with a lime wedge and dip it into the salt to coat the rim.

Serve the Margarita
Strain the margarita mixture into the prepared glass over fresh ice cubes. Garnish with lime wedges and jalapeno slices for an extra kick.
