Latkes Preparation

Grate Potatoes and Onion
Peel and grate the potatoes and onion using a box grater or food processor. Place grated potatoes in a clean kitchen towel and wring out excess moisture.

Mix Ingredients
In a large bowl, combine the grated potatoes, grated onion, eggs, flour, salt, and black pepper. Mix until well combined.

Fry Latkes
In a large skillet, heat vegetable oil over medium-high heat. Scoop about 1/4 cup of latke mixture and carefully place it in the hot oil. Flatten slightly and fry for about 3-4 minutes per side or until golden brown. Remove and drain on paper towels.

Add Milk
Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring constantly until the sauce thickens, about 5-7 minutes.

Add Cheese and Seasonings
Stir in the grated Swiss cheese, nutmeg, salt, and pepper. Mix until the cheese is melted and the sauce is smooth.

In a non-stick skillet, cook the eggs sunny side up over medium heat until the whites are set but the yolks remain runny.
