Prepare the Ingredients
Gather all ingredients. If using turkey, slice it into thin pieces similar to the corned beef.

Toast the Bread
Butter one side of each slice of rye bread. This will create a crispy exterior when grilled.
Assembly and Cooking

Assemble the Sandwich
On the unbuttered side of four slices of bread, layer corned beef, Swiss cheese, sauerkraut, and a generous spread of Thousand Island dressing. If using turkey, you can substitute or add it on top of the corned beef.

Flip and Continue Grilling
Carefully flip the sandwiches and grill the other side until golden brown and cheese is melted, another 4-5 minutes.
Serving

Slice and Serve
Once the sandwiches are grilled to perfection, remove them from the skillet. Slice in half and serve with additional Thousand Island dressing on the side if desired.
