Prepare the Ingredients
Rinse the baby spinach under cold water and chop coarsely. Pit and chop the kalamata olives. Dice the tomatoes. Crumble the feta cheese.

Cook the Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted. Remove the spinach from the skillet and set aside.

Combine Ingredients
Add the sautéed spinach, chopped kalamata olives, diced tomatoes, and crumbled feta cheese to the eggs. Stir gently to combine and cook for an additional 2 minutes until heated through.

Prepare the Potatoes
Wash and peel the potatoes, then cut them into small cubes.

Warm the Pita
Place the pita bread on a baking sheet and warm in a preheated oven at 350°F (175°C) for about 5 minutes until heated through.
