Prepare the Breading Station
Set up three shallow dishes for the breading process: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs.

Bread the Haddock
Dredge each haddock fillet in the flour mixture, then dip into the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Haddock
Carefully place the breaded haddock fillets in the hot oil and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Sandwich
Slice the Cuban rolls in half. On the bottom half, layer lettuce, followed by the fried haddock fillet, sliced tomato, and top with tartar sauce. Place the top half of the roll on top.
