Method

Preparation of Tartar Sauce

    In a mixing bowl, combine mayonnaise, diced pickles, lemon juice, and capers (if using). Season with salt and black pepper to taste. Mix well and set aside.

    For Cajun tartar sauce, add Cajun seasoning to the prepared tartar sauce and mix well.

Breading the Haddock

    In a shallow dish, combine the all-purpose flour, salt, black pepper, and paprika.

    In another shallow bowl, whisk together eggs and milk until well combined.

    In a third shallow dish, place the cornmeal.

    Dredge each haddock fillet first in the flour mixture, then dip in the egg mixture, and finally coat with cornmeal. Ensure each fillet is well coated.

Frying the Haddock

    Heat oil in a large skillet over medium-high heat until hot.

    Carefully add the breaded haddock fillets to the skillet. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.

    Once cooked, remove the fillets from the skillet and place them on a plate lined with paper towels to absorb excess oil.

Assembling the Sandwich

    Slice the brioche buns in half and toast them lightly if desired.

    On the bottom half of each bun, place two lettuce leaves.

    Add a slice of tomato on top of the lettuce.

    Place a fried haddock fillet on top of the tomato.

    Generously spread tartar sauce over the haddock and top with the upper half of the bun.
