Preparing Tartar Sauce

    Mixing the Ingredients

    In a medium bowl, combine the mayonnaise, finely chopped dill pickles, lemon juice, capers, salt, and black pepper. Stir well until all ingredients are well incorporated. Set aside in the refrigerator to chill while you prepare the grouper nuggets.

Preparing Grouper Nuggets

    Cutting the Fish

    Rinse the grouper fillets under cold water and pat dry with paper towels. Cut the fillets into bite-sized nugget pieces, about 1-2 inches in size.

    Setting Up Breading Station

    In three separate shallow bowls, place the all-purpose flour in one, whisk together the eggs and milk in the second, and mix the cornmeal, salt, black pepper, and garlic powder in the third.

    Breading the Nuggets

    Take each piece of grouper, dip it first into the flour, shaking off any excess. Then dip it into the egg mixture, allowing the excess to drip off, and finally coat it with the cornmeal mixture, pressing lightly to ensure the cornmeal adheres.

    Frying the Nuggets

    In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). Carefully add the breaded grouper nuggets in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes per side, or until golden brown and cooked through. Use a slotted spoon to remove the nuggets and place them on a plate lined with paper towels to drain excess oil.
