    Prepare the Chicken

    Cut the chicken breast into tender-sized strips. Season the strips with salt, black pepper, garlic powder, and onion powder. Let them sit for about 15 minutes to absorb the flavors.

    Set Up the Breading Station

    In one bowl, combine all-purpose flour and cornstarch. In another bowl, whisk together eggs and buttermilk until well combined.

    Bread the Chicken

    Dip each chicken strip first into the flour-cornstarch mixture, ensuring it is well-coated. Then, dip it into the egg mixture, allowing any excess to drip off. Finally, return the chicken to the flour mixture for a second coating. Set aside on a plate.

    Heat the Oil

    In a large, deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of bread; if it sizzles, the oil is ready.

    Fry the Chicken Tenders

    Carefully add the breaded chicken tenders to the hot oil in batches, ensuring not to overcrowd the skillet. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to remove the chicken and transfer to a paper towel-lined plate to drain excess oil.

    Once all the chicken tenders are fried, toss them in your choice of sauce (Buffalo, wild blueberry BBQ, hickory smoked BBQ, chili crisp and honey, wombat habanero, or honey mustard) until well coated. Serve immediately.
