    Wash and Peel Potatoes

    Thoroughly wash the Russet potatoes under cold water to remove any dirt. If desired, peel the potatoes using a vegetable peeler.

    Cut Potatoes into Fries

    Slice each potato lengthwise into quarters, then cut each quarter into strips about 1/4 inch thick to form fries.

Soaking

    Soak the Cut Fries

    Place the cut fries into a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

Frying

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    Carefully add the dried fries to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 5-6 minutes, until golden brown.
