For the Home Fries

Method

Preparing the Home Fries

  1. 1

    Dice Potatoes

Wash the potatoes thoroughly and cut them into 1/2-inch cubes.

  2. 2

    Chop Onion

Peel the onion and dice it into small pieces.

  3. 3

    Heat Oil

Add the olive oil to the skillet and let it warm up for about 1 minute.

  4. 4

    Cook Potatoes and Onions

Once the oil is hot, add the diced potatoes and chopped onions. Stir to coat them in oil.

  5. 5

    Season

Sprinkle salt, pepper, and paprika over the potatoes and onions.

  6. 6

    Fry Potatoes

Continue to cook, stirring occasionally to ensure even cooking, until the potatoes are crispy and golden.

Preparing the Eggs Benedict

  1. 7

    Toast English Muffins

Split the English muffins in half and toast them in a toaster or on a skillet.

  2. 8

    Prepare Poaching Water

Fill a pot with water and bring it to a gentle simmer. Add a splash of vinegar (optional) to help the eggs hold their shape.

  3. 9

    Poach Eggs

Crack each egg into a small bowl and gently slide it into the simmering water. Cook for about 3-4 minutes until the whites are set but the yolks are still runny.

  4. 10

    Heat Canadian Bacon

In a skillet, add the Canadian bacon slices and cook over medium heat until warmed through, about 2-3 minutes.

  5. 11

    Assemble

On each toasted English muffin half, place a slice of Canadian bacon, add a poached egg, and generously drizzle with hollandaise sauce.
