Method
Pretzel Dough Preparation

Activate the Yeast
In a bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for about 5-10 minutes until foamy.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Add in the yeast mixture and melted butter. Mix until the dough begins to come together.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl and cover with a clean cloth. Let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzels
Preheat your oven to 450°F (230°C). Once dough has risen, punch it down and divide into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop pretzels into the boiling water, 2-3 at a time, for about 30 seconds each. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Bake the Pretzels
Sprinkle the pretzels with coarse sea salt and bake in the preheated oven for about 12-15 minutes until golden brown. Remove and let cool slightly.

Combine Ingredients
In a small bowl, mix together whole grain mustard, beer, honey, and apple cider vinegar until well combined.

Serve
Transfer the mustard to a serving bowl and set aside for serving with pretzels.
Windjammer Beer Cheese Preparation

Combine Cheese Ingredients
In a medium bowl, beat together cream cheese until smooth. Gradually mix in shredded cheddar cheese, beer, hot sauce, garlic powder, onion powder, and black pepper until well combined.

Transfer the beer cheese to a serving bowl and serve it warm alongside the pretzels.
