Method

Prepare the Breakfast Potatoes

  1. 1

    Cook the Potatoes

In a skillet, heat olive oil over medium heat. Add the cubed breakfast potatoes, paprika, garlic powder, and salt. Cook for about 10-15 minutes, stirring occasionally, until potatoes are golden brown and cooked through.

Cook the Bacon

  1. 2

    Fry the Bacon

In a separate skillet, cook the bacon slices over medium heat until crispy. Remove from skillet and place on paper towels to drain excess grease.

Prepare the Vegetables

  1. 3

    Sauté the Vegetables

In the same skillet used for the bacon (remove excess grease if necessary), add diced bell pepper and onion. Sauté for about 5-7 minutes until soft.

Scramble the Eggs

  1. 4

    Prepare the Egg Mixture

In a bowl, whisk together the eggs, milk, salt, and black pepper. Pour the mixture over the sautéed vegetables in the skillet.

  2. 5

    Cook the Eggs

Scramble the eggs over medium heat until fully cooked, about 5 minutes. Remove from heat and set aside.

Assemble the Burritos

  1. 6

    Fill the Tortillas

Lay a large flour tortilla on a flat surface. Add a portion of the cooked breakfast potatoes, scrambled eggs, crumbled bacon, and sprinkle with pepper jack cheese.

  2. 7

    Roll the Burrito

Fold in the sides of the tortilla and roll it tightly from the bottom up. Repeat with the remaining tortillas.

Serve the Burritos

  1. 8

    Final Touches

Serve the breakfast burritos warm with sour cream and salsa on the side.
