Preparing the Blackened Grouper

Make the Spice Mixture
In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, salt, and black pepper until well combined.

Season the Grouper
Pat the grouper fillets dry with a paper towel. Rub both sides of each fillet generously with the spice mixture to ensure they are well coated.

Cook the Grouper
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the grouper fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice charred crust. Remove from heat and let rest.
Assembling the Sandwich

Prepare the Buns
Toast the burger buns lightly on a skillet or in a toaster until golden brown.

Slice the Tomato
While the buns are toasting, slice the tomato into even slices.

Assemble the Sandwich
On the bottom half of each toasted bun, place a lettuce leaf, followed by the blackened grouper fillet, a slice of tomato, and a generous dollop of tartar sauce. Top with the other half of the bun.
