Prepare Pork Filling

Cook the Pork
In a slow cooker, combine the pork shoulder, chipotle peppers, minced garlic, cumin, oregano, salt, and black pepper. Add a cup of water to help with cooking.

Slow Cook
Cover and cook on low for 8 hours or until the pork is tender and easily shredded. Once cooked, shred the pork with two forks.

Grill Pineapple
In the last 30 minutes of cooking, grill the pineapple slices on a grill or stovetop grill pan until caramelized, about 3-4 minutes per side.
Make Chipotle Aioli

Combine Ingredients
In a bowl, mix together mayonnaise, lime juice, chipotle peppers, garlic powder, and salt. Whisk until smooth and well combined.
Assemble Tacos

Warm Tortillas
Heat the flour tortillas on a skillet for about 30 seconds on each side until warm and pliable.

Fill Tortillas
On each tortilla, layer a generous amount of shredded pork, grilled pineapple, shredded Oaxaca cheese, pickled onions, and fresh cilantro.

Drizzle Aioli
Finish off by drizzling the chipotle aioli over the filled tortillas.

Serve
Fold the tortillas in half and serve immediately with additional lime wedges on the side, if desired.
