Preparation

    Prepare the Vegetables

    Thinly slice the Export Ale onions and Cubanelle peppers. Set aside.

    Cook the Ribeye

    In a large skillet over medium-high heat, add the shaved ribeye. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Cooking

    Sauté the Onions and Peppers

    In the same skillet, add a drizzle of oil if necessary. Add the sliced onions and cook until they are soft and translucent, about 3-4 minutes. Then add the sliced Cubanelle peppers and cook for an additional 2-3 minutes until tender.

    Combine Ingredients

    Return the cooked ribeye to the skillet with the onions and peppers. Mix well to combine and heat through for about 2-3 minutes.

Assemble the Sandwich

    Add Cheese and Aioli

    Lay slices of provolone cheese over the ribeye mixture in the skillet. Cover for 1-2 minutes to melt the cheese. Meanwhile, slice the Cuban rolls in half.

    Spread Mojo Garlic Aioli

    Spread Mojo Garlic aioli generously on the inside of each Cuban roll.

    Fill and Serve

    Spoon the ribeye, onion, and pepper mixture onto the bottom half of each roll. Place the top half of the roll on top and serve immediately.
